Potato pesto babka, young beetroot soup and Chantilly cream roulade â beloved Polish recipes with a London twist (opens the original)
Read excerpt
Something remarkable happens when you sit down at a beautifully dressed table. The most humble food becomes celebratory. When I host, the way everything looks and feels is crucial, because I have to set the right mood. I want people to feel looked after and inspired. I learned the importance of a good meal and a well-dressed table from my grandmother, whose Polish kitchen I grew up in. There is something so appealing about the colour and taste of rose syrup, but if you prefer, replace it with hibiscus or pomegranate syrup. Also, any fizz will work here: you could opt for a Spanish cava or a French crémant or dry white wine, or keep it all pink with a rosé. Mix all the ingredients together, adding the syrup last due to its thickness. Pour into 2 small glasses filled with ice cubes and serve.
