A Fall Meal Plan: Loaded Lentil Salad with Beets and Chicken Apple Sausage, Fall Chicken Salad, and Pumpkin Protein Bites (opens the original)
Read excerpt
Hi guys! I hope you had a great week. I got a comment requesting that I post more meal preps. I love being asked for specific things; it’s very helpful. This week I’m doing a very fall meal plan; it’s one of my favorites. It makes great use of all the delicious fall produce: apples, beets, pumpkin, cranberries, etc. It’s 3 simple elements: one fiber-packed salad (you can eat alone or as a side), one protein (you can make into lunch or snack on), and one sweet bite (perfect for snacking and desse

I’ve been big into lentils lately. They have almost the exact macros of beans but you can cook them from dried in usually about 30 minutes, making them a bit more of a pantry staple. These delicious bites legitimately taste like pumpkin bread batter. I’m calling them protein balls because they have a little bit of protein, but mostly just because I don’t want to call them pumpkin balls lol. They also have a great amount of fiber. The important thing is they’re delicious.<div class

Apparently, some people don’t put beans in their chili? Each to their own but it would feel wrong for me to send out a chili recipe without beans. As a bean lover, chili is my favorite fall food. It’s extremely nutritious, with great macros (tons of fiber and protein), and it tends to be quite affordable!
