Ham it up: Niall McKennaâs slow baked ham hock and macaroni cheese with ham Hock (opens the original)

Cooking at home is completely different to cooking and working in the restaurant. Itâs harder to make something from scratch without any leftovers, so when I cook at home I always have a second dinner in mind to make sure nothing goes to waste. When cooking a ham, there are endless ways to enjoy it, with the first serving making for a delicious and flavourful meal and the leftovers can go into pie, soup, pasta or any dish you can think of â and luckily all of these are perfect for a weekday

Now the weather and produce are changing Iâve started making the most of it and cooking with ingredients that are at their best in autumn and beautifully in season. Mushrooms are an excellently versatile ingredient to cook with; we donât often eat a lot of them at home but in the restaurant theyâre an excellent ingredient and a tasty alternative for vegetarians. As summer comes to a close this week and we welcome back the colder weather itâs time to return to tasty and reliable recipes. This week is also the perfect time to put these dishes to good use and organise a get-together with friends or family before the schooltime chaos returns and the seasonâs produce changes. For larger get-togethers I find it best to keep the menu simple and make something everyone is guaranteed to enjoy. With this in mind, this weekâs recipes are chicken with peas an

Iâve just returned from a few days in France, where I had the chance to enjoy some fantastic local shellfish. It reminded me just how important fresh, seasonal ingredients are and how little they need to create something truly delicious. While the quality was exceptional, it also made me appreciate what we have here at home. Weâre incredibly fortunate to have access to some of the finest seafood on our doorstep, with local fishmongers and markets offering outstanding produce at great value.
