I know one day we will have cold weather again here in Texas. Although it’s late September the weather is still in the upper 90’s. I long for the soup days and they will return. I love Vietnamese pho. I’ve made my vegetable version many times and it always hits the spot. Sure, restaurants make it, but I prefer my lower sodium version where I control how much salt is in it. I don’t know why I haven’t made this tofu in such a long time. I’d forgotten how good it is and what a wonderful sandwich it makes. Keep some around at all times for quick sandwiches. You won’t regret it. The homemade seeded sourdough makes it even better, but it would be good on any bread.<div
